How Much Does Steak Shrink When Cooked? The Numbers by Doneness Level
About 25% — but that number moves a lot
Most steaks lose roughly 25% of their raw weight by the time they hit the plate. Cook one to well-done and that figure can climb past 35%. Pull it off at rare and you might only lose 15–20%. The gap is wide enough that it genuinely matters for portion planning, and for understanding why an expensive ribeye looks so much smaller than what you weighed out raw.
What is actually happening inside the meat
Raw beef is roughly 70% water. When heat hits the muscle fibers, proteins begin to denature — they unfold, then tighten, squeezing out moisture the way a compressed sponge loses water. Collagen, the connective tissue running through the meat, starts this process at around 140°F (60°C). As internal temperature climbs, the squeezing intensifies.
Fat renders out at the same time. Three things happening at once: water evaporating from the surface, protein fibers contracting and expelling juice, fat liquefying and dripping away. All three make the steak physically smaller.
Controlled cooking experiments show just how temperature-sensitive this is. A steak brought to an internal temp of 137°F loses around 8% of its weight. At 160°F that figure is nearly 24%. Same steak, 23-degree difference in final temperature, three times the moisture loss.
Shrinkage by doneness level
Here is a rough guide:
- Rare to medium-rare (125–135°F): 15–20% weight loss
- Medium (140–150°F): 20–25%
- Well-done (160°F and above): 25–35%, sometimes more
If a cooked steak is losing more than 30%, something usually went wrong — overcooked, heat too high, or the steak was pressed during cooking.
The cut plays a role
A lean cut like tenderloin or flank has less fat to render, so it tends to hold its dimensions better than a heavily marbled ribeye or brisket. That sounds counterintuitive — more fat sounds like more to lose — but it is worth noting that a well-marbled cut starts with more raw mass, and the fat that renders out is partly replaced in perceived juiciness. Different trade-offs, not a strict hierarchy.
What actually helps reduce shrinkage
You cannot stop it entirely. But you can reduce it meaningfully with a few habits.
- Do not press the steak. Pressing with a spatula physically squeezes moisture out of the fibers. It does not meaningfully speed up cooking — it just accelerates moisture loss directly onto the pan.
- Pat the surface dry before cooking. Wet meat steams rather than sears. The longer the steaming phase, the longer the steak sits in high heat, and the more moisture it loses before a crust even forms.
- Pull it 5°F before your target temperature. Carryover cooking will finish the job during rest. Pulling at 130°F and resting for five to seven minutes brings most steaks to 135°F without overcooking.
- Rest properly. Proteins relax off-heat and reabsorb some of the expelled juices. Less liquid on the cutting board means more staying in the meat.
- Try a lower-heat approach for thick cuts. The reverse-sear method — low oven first, then a quick hot pan sear — produces noticeably less shrinkage than a straight high-heat cook from raw. The prolonged low heat keeps internal temperatures in the gentler range for longer.
Practical portion math
Planning for a group? Assume 25% loss and buy accordingly. A 200g raw steak becomes roughly 150g cooked. For calorie tracking, this matters in the other direction: the calorie density per gram is higher in cooked meat than raw, because the same protein and fat are now packed into less mass. A cooked weight is not interchangeable with a raw weight in a nutrition calculator.
